Mini Veggie Pizza 

Ingredients

• 2 tablespoons extra virgin olive oil
• 3/4 cup grape tomatoes, halved
• 3 cups eggplant, diced
• 1 small yellow squash, thinly sliced
• 1 small zucchini, grated
• 1/4 onion, sliced
• 3/4 teaspoon Italian seasoning
• ¼ teaspoon of cane sugar (optional)
• 1/4 cup fresh basil, shredded
• 1/3 cup feta cheese, crumbled
• 1/2 cup mozzarella cheese, grated
• 3 Whole Wheat English muffins, sliced in half
• 
  

Directions: 

Preheat oven to 400 °F.

1. Heat 2 tablespoons of olive oil in a skillet and add tomatoes, eggplant, squash, zucchini, and onion. Cook until veggies are softened. Add Italian seasoning and salt to taste. You might need to add a sprinkle of sugar to counteract the tomatoes, sometimes it’s not needed. (try the sauce before you add sugar)

2. Blend veggies into a sauce. 

3. Spoon the veggie sauce evenly over the English muffin halves.

4. Top with mozzarella and feta cheese. 

Bake 25 minutes, or until cheese is melted and crust is lightly browned.

Note: You can add more toppings and make it extra special. This is an amazing recipe to get kiddos involved in cooking. Just keep in mind smaller kiddos need extra help and always supervise your kiddos, even when they think they are all grown up.
